Things to Keep on Hand for Quick & Easy Dinners - Barber Chicken Cordon Blu and a frozen veggie

I don’t know if I’ve officially told you guys, but I got divorced last year. And, transitioning to being a single parent of two young boys was a real tough adjustment for me. Having to do everything myself seemed so overwhelming at times, but I think I’ve finally got the hang of it. The secret ingredient is to simplify things like dinner.

I have to choose where and how to spend my time on the tasks that matter most. With the holidays coming up that is truer now more than ever. Just thinking about all the upcoming class parties, holiday plays, and PTA events has me stressed out!

One of the biggest challenges between soccer practice and homework time has always been coming up with something to put in my little guys bellies. If you’ve read around here for a while, you know I love my pressure cooker, but sometimes even that takes too much time to get a quick and delicious meal on the table (that everyone will actually eat)!

That’s why I’ve spent some time working out some tricks to make dinner faster and easier. I realized if I just make sure to stock a few simple items, I can always whip up a dinner my kids will actually eat in a jiffy!

4 Things to Keep on Hand for Quick & Easy Dinners

Things to Keep on Hand for Quick & Easy Dinners - Barber Chicken Cordon Blu and a frozen veggie

1. Barber Foods Chicken Entrees

Like I mentioned, getting a meal on the table that EVERYONE will eat is rough. My kids are ridiculously picky. And, when I say picky, I mean a spoonful of boxed macaroni and cheese has never crossed their lips willingly. I always have to plead and barter unless it’s homemade, which is crazy because what kids don’t like boxed macaroni!!

Barber Foods Cordon Bleu Stuffed Chicken Breasts has become a lifesaver when I’m in a pinch! Even though I’m looking for a quick and delicious meal solutions, I am not willing to compromise on taste and quality. With Barber Cordon Bleu Stuffed Chicken Breasts, there is no compromise. It’s made with premium chicken and hand filled with quality ingredients. When it comes freshly baked from the oven, it literally tastes like homemade (or actually better in my opinion) and my kids love it. You can also expect the perfect crispy chicken breast every time, unlike with homemade.

To be brutally honest here, I don’t make chicken cordon bleu homemade but maybe once every year or two when I feel like wasting a meal trying again. It always comes out disappointing, which is why you don’t see a recipe around here for it. It just turns into a soggy, messy, log that I’m not even sure is done all the way even though the thermometer is telling me so.

With Barber Foods though, you can get a dependable crispy chicken breast with delicious ham and gooey cheese that seeps out as you cut into it. The best part about it, neither one of the kids complain about it at all which is saying something and I get to spend more time with them and getting more tasks done while it’s cooking away in the oven!

What Makes Barber Chicken Cordon Bleu Special?

Barber is actually the original stuffed chicken breast. That’s right, everyone else is just imitating.

Another reason I turn to Barber FoodsCordon Bleu Stuffed Chicken Breasts is a little nostalgia for me. I remember eating these as a little girl after swimming all day in the pool. I used to complain because the 30 minutes it takes to cook them in the oven felt like forever to me. The whole house would smell delicious and I would be pacing the kitchen waiting for them to come out. Now, as a mom, I am glad it takes that 30 minutes to cook. It gives me just enough time to put together a little side and salad while my 7-year-old sits at the counter and we work on homework together.

Barber has a variety of stuffed chicken breast as well. Every time I swing into my local Walmart and stroll through the frozen food section, my kiddo always points them out.

If you are in a pinch for time with all the upcoming hustle and bustle of the holiday season, or just simply looking for a stress-free dinner, head to your local Walmart and pick up Barber Foods Chicken Cordon Bleu. I can promise you nothing is simpler than popping these babies in the oven and letting them do their thing while you prep for the next day or just send some quality time with the family.

2. Frozen Vegetables

Another staple for and quick and easy dinners, is keeping frozen veggies on hand. If you’re doing a Barber Foods Chicken Cordon Blu or any kind of protein in the oven, you can easily throw a vegetable in the microwave to pair with it without too much thought or trouble. You can also use frozen veggies as main course addition or shortcut like in my pressure cooker chicken broccoli and rice. It’s so nice to be able to just throw your veggies in to your meal without having to worry about cleaning, chopping, or portioning. Dinners start to get a lot faster when you can cut out almost all of the meal prep!

3. Rice

Rice is one of those universal ingredients that can go with just about anything. You can make a whole meal around it or just eat it as a side. It’s also a great way to also add extra portions to your meals when your holiday guests bring an unexpected plus one.

Cooked rice keeps really great in the fridge and freezer so when you have time you can cook up a big batch and simply store it for later during the week. Leftover rice also makes super yummy stir fry so don’t be afraid to make too much!

4. Beans

When you’re in a hurry, having canned beans in your pantry can be a godsend. They are high in protein like meat but keep in the pantry forever. Plus, seeing as they are already cooked, they can cut meal prep time in half. With a little out of the box thinking, you can have a quick, easy, and delicious meal right from the pantry. To get your gears turning, think chickpea tacos, 5 bean soup, red bean curry, black bean salad, and more.

Another great thing about beans is they’re cheap! If you are looking to have a budget friendly quick and easy meal, substitute ½ the meat with beans! Seriously, when we have cheeseburger macaroni I half the meat and use a can of kidney beans every time. It’s healthier for my kids and my single mom wallet!

I guess my final thought here is sometimes you just have to give yourself a little grace when it comes to dinner. Days are long, and with the holidays coming up, they’re about to get even longer. That’s why I say you need to keep these 4 things on hand for quick & easy dinners at all times

If you can add these few quick shortcuts to dinner like the Barber Foods Cordon Bleu Stuffed Chicken Breasts, maybe you can save a little sanity. Don’t believe me? Head to Walmart and pick up a few boxes of the Barber Foods Stuffed Chicken Breasts, a frozen veggie, and call it a night. You deserve the time you are saving to spend with the ones you love most.
