I am trying out my Air Fryer more and more and I know you will be too, with delicious recipes like this one!  It’s a fun & tasty spin on your plain ol’ Chicken & Potatoes, but your family will love it!  When it comes to my nights, I am rushing around with after school activities, homework, and oh yeah, don’t forget my very active pre-toddler! So, I need to be in & out of the kitchen as my mom duties call!  That’s where this Air Fryer Hot Honey Chicken Thighs & Roasted Potatoes is my dream come true.

Now, I use chicken thighs for this particular recipe, but you could always tweak it with your favorite pieces of chicken.  (Just make sure that you are checking that the internal temperature for your chicken does reach that safe 165 degrees.) I like the taste of the chicken thighs and I can usually find them on a great sale if I watch my local ads!  Additionally, if you don’t want it quite so HOT for your family, you could always use just 1 of the chopped chilies to take away a bit of the fire!  We like things HOT in our house…YUM!

For the potatoes, I prefer using baby potatoes as I have a lot less prep work for them!  However, you could make them more colorful and get the mixed fingerlings to add a fun addition to your plate.  Notice, they are still the smaller sizes, so prep won’t change much at all, but could a fun & colorful variation to this meal.

Toss the chicken thighs in salt, pepper, and olive oil, and preheat your air fryer to 400 degrees for 1-2 minutes.

Add your chicken thighs to the air fryer and cook for 23-25 minutes, until internal temperature reaches 165 degrees. You may need to do 2 batches of 2 chicken thighs, depending on the size of your air fryer.

Meanwhile, add your honey and chopped chilies to a small sauce pan and heat over medium-high heat until it begins to simmer. Simmer for 1-2 minutes, and set aside. Once chicken thighs are cooked through, brush hot honey glaze over thighs and serve.

Equipment

Ingredients  

Hot Honey Chicken Thighs

  • 4 chicken thighs skin-on, bone-in
  • 2 chilis chopped
  • ½ cup honey
  • 2 tbsp olive oil
  • salt and pepper

Roasted Garlic Potatoes

  • lbs baby potatoes
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 tbsp olive oil

Instructions 

  • Toss the chicken thighs in salt, pepper, and olive oil, and preheat the air fryer to 400 degrees for 1-2 minutes. 
  • Add your chicken thighs to the air fryer and cook for 23-25 minutes, until internal temperature reaches 165 degrees. You may need to do 2 batches of 2 chicken thighs, depending on the size of your air fryer.
  • Meanwhile, add the honey and chopped chilies to a small sauce pan and heat over medium-high heat until it begins to simmer. Simmer for 1-2 minutes, and set aside. Once chicken thighs are cooked through, brush hot honey glaze over thighs, and serve.

Potatoes

  • Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil and spray lightly with non-stick cooking spray. 
  • Toss the potatoes in salt, pepper, and olive oil. Sprinkle with rosemary and thyme and toss again. 
  • Bake for 18-20 minutes until potatoes are tender. These can also be cooked in the air fryer at the same temperature and time, if desired, just toss every 5-7 minutes while cooking to avoid them sticking together.
