Instant Pot Creamy Sausage & Spinach Tortellini Soup

Instant Pot Creamy Sausage & Spinach Tortellini Soup

Instant Pot Creamy Sausage & Spinach Tortellini Soup is loaded with spinach, sausage, veggies, and tortellini! Even sweeter, all this soup only takes is a few minutes of prep, and a couple minutes of cooking time in the Instant Pot, to taste like you have been stewing it all day! Now that the weather is finally changing to the correct fall temperatures in NY, soup season here is in full swing! I have been craving soup lately, but am not such a big fan of tomato based soups. Usually when you see a recipe for tortellini soup its always tomato based. That's why I took an old family favorite and converted it to my Instant Pot! Sometimes you just have to improvise! This Keep Reading

Instant Pot Vegetarian Chili

Instant Pot Vegetarian Chili

Sometimes you just have to do meatless Monday on a Wednesday! Cooking chili in at house usually consists of a pot boiling on the stove for hours and hours. It's not really a meal I would say I slaved over the stove for, but the stove was absolutely on all day. I am sure that scenario sounds pretty familiar to you as well. But, what if I told you we no longer need to do that?! Thanks to the handy dandy Instant Pot, that whole chili making process takes about 20 minutes! And, the best part is that your chili will still taste like you cooked it all day! I do have to say, making chili without meat is a unique task. Instant Pot Philly Cheese Steak Soup provides all of the deliciousness of Philly Cheese Steaks, only in soup form! It's getting cold here in upstate New York which means it's the perfect time for soup! Traditionally, my husband always gives me a big sigh when I tell him we are having soup for dinner. He thinks soup is not a "dinner food" and that he won't be full when he's done eating it. Well, I threw down the gauntlet on that. For dinner last night, I filled up a bowl with hearty Instant Pot Philly Cheese Steak Soup, handed him a chunk of crusty bread, and watched him go to town! He did Keep Reading

Copycat Panera Autumn Soup

Copycat Panera Autumn Soup

So if you haven't had Panera's Autumn soup yet, you don't know what your missing! It is the best butternut squash I have ever had an I could easily eat it every day. At around $6 a bowl though, my budget says otherwise. Make your own at a fraction of the price! This weekend I stopped by my local farmers market and picked up a few large size butternut squash with the intent to inmate this soup for a fraction of the cost. To my suprise it was actually not as hard as I thought. I just added everything I could taste in the soup and the result came out AMAZING if I do say so myself! It might even be better than that $6 Panera soup and only cost me around $5 to make (I had most of the Keep Reading
