Overnight Gingerbread Oatmeal
  • 2 Cups steel cut oats I used old-fashioned oats because I like my oatmeal on the "mushy" side
  • ½ Teaspoon salt
  • Tablespoon cinnamon
  • 2 Teaspoons ginger
  • 1 Teaspoon nutmeg
  • 1 Teaspoon cloves
  • 1 Teaspoon allspice
  • 8 cups water
  • ½ Cup Maple Syrup If you want the true gingerbread taste substitute syrup for molasses
  • Additional toppings: whipped cream walnuts, dried cranberries, raisins, sprinkles (for the little ones)
  1. Spray the inside of your crockpot with cooking spray.
  2. Combine all ingredients into crockpot and stir well.
  3. Cover and cook on high for 3-4 hours or on low for 8 hours, stirring occasionally.
  4. Serve with maple syrup and optional toppings.
