Made with frozen chicken, Instant Pot Chicken, Broccoli, and Cheese Soup is the perfect dinner when you are in a pinch for time!

If you are new here or haven’t noticed, I have been on a little hiatus lately. I just recently (like within the last week) moved into a beautiful new home. As you can imagine, it’s been hard getting back into a normal routine. Dinner seems to be the toughest areas for me lately. After basically eating out for a week, I was having a really hard time getting myself back together.

Last night, I was desperately craving Panera (again), but trying to end the eating out cycle, I decided to suck it up and break out the good ol’ Instant Pot to make something hearty for dinner.

While shifting through boxes to find my Instant Pot I realized that I hadn’t even pulled anything out to defrost! If I would have been a normal person, you know I would have thought of dinner a few hours before we were supposed to eat. But, being the hot mess that I usually am, dinner didn’t even come to mind until it was the time everyone was supposed to be eating it.

One of the good things about consistently being a mess, I have become pretty good at improvising (especially with dinner). This Instant Pot Chicken, Broccoli, and Cheese Soup was simply born out of throwing everything in the pot and just hoping for the best. To my surprise (honestly), this soup turned out amazing! It was so hearty and a complete breeze to put together!

It was so creamy and delicious! And, when I say effortless I really mean it! The only real work I had to do was chop up some broccoli and throw in some drumsticks that where left over from when I made Instant Pot Chicken Teriyaki Drumsticks. Everything else was simply just tossed in! How much easier can dinner get?! Serve this soup up with a big piece of nice crusty bread for a meal that looks like you cooked it on purpose.

If you are in a pinch for time and are looking for a deliciously hearty dinner, I highly recommend giving this Instant Pot Chicken, Broccoli, and Cheese Soup a whirl! You won’t be sorry that you did!

Instant Pot Chicken, Broccoli, and Cheese Soup

Place all ingredients in Instant Pot and give it all a good stir. Place the lid on the IP and select the “Soup/Chili” setting for 12 minutes.
Seal and cook, when timer is up preform a natural release. Check the chicken with a meat thermometer for an internal temperature of 165F. Remove chicken and shred. Add chicken back in Taste and adjust seasoning. Serve with an optional garnish of additional cheese and/or sour cream.

Instant Pot Chicken, Broccoli, and Cheese Soup

Ingredients

  • 1 head broccoli florets chopped
  • 1/4 onion minced or pureed
  • 4 chicken drumsticks fresh or frozen *remove 5 minutes from cook time if fresh
  • 1 can cheese soup
  • 2 cups chicken broth or water
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Shredded cheese optional garnish

Instructions

  • Place all ingredients in Instant Pot and give it all a good stir.
  • Place the lid on the IP and select the "Soup/Chili" setting for 12 minutes.
  • Seal and cook, when tier is up preform a natural release.
  • Check the chicken with a meat thermometer for an internal temperature of 165F.
  • Remove chicken and shred. Add chicken back in.
  • Taste and adjust seasoning.
  • Serve with an optional garnish of additional cheese and/or sour cream.
