To be perfectly transparent and honest here, my 4 year old hates this and would not even take two bites. My husband on the other hand ate this right out of the pot!

Lately I have been craving spinach dip like crazy! I have been trying to watch what I eat and hit the gym every day so you can imagine how annoying that can be when you really want something. I decided to treat myself for dinner tonight (and because I can’t just sit down with a loaf of bread and dip), I threw together everything I was craving in my Instant Pot.

The end result turned out to be something out of this world! It is the perfect combination of pesto, chicken, and spinach that really pulls this meal together. Just a quick note about the artichokes, I can eat them right out of the can so I didn’t cut mine like the recipe calls for. I just wanted to mention that so if you see the big artichoke pieces in the pictures it didn’t throw you off.

Instant Pot Chicken, Spinach, and Artichoke Pasta

Heat oil on saute in your Instant Pot. When oil is hot add garlic and cook for 1 minute or so until it becomes browned. When garlic is cooked, add chicken breast. Season with salt and pepper. Cook chicken for 2-3 minutes (just until sides start to brown).

Turn Instant Pot off and add pasta, broth, and water. Cook on manual high pressure for 3 minutes (if you are using a different kind of pasta just cook it for half the normal time on the box).When time is up preform a quick release.

Turn your Instant Pot back onto saute and add pesto and artichokes.

Cook for 1 minute or so until warm then add the cream and cheese. Cook for another minute or so then turn off the Instant Pot. Add spinach and stir together until wilted.

Serve immediately and enjoy!

6 qt Instant Pot

Ingredients  

  • 1-1.5 lbs boneless skinless chicken breast cubed
  • 2 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup water
  • 12 oz penne pasta
  • ¾ cup light cream
  • 6 oz pesto
  • 14 oz can quartered artichoke hearts in water drained and chopped
  • ½ cup parmesan cheese shredded
  • 1 cup baby spinach

Instructions
